Apple and carrot muffins

Here's a healthy and deliciously moist muffin that's really easy to make. These are one of my favourite muffins and they are great for breakfast, lunch boxes or a snack.
Breakfast is probably the most important meal of the day and muffins are good as you can take them with you on your way to school or work if you are running late. Missing breakfast is not a good idea as you will start to feel tired, not be able to concentrate properly and then grab something sugary to eat mid morning. Much better to have some complex carbohydrates to give you long lasting energy and get you through till lunchtime.
150g (5oz) plain wholemeal flour
50 g (2 oz) granulated sugar
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp salt
125 ml (4 fl oz) vegetable oil
60 ml (2 fl oz ) honey
60 ml ( 2 fl oz) maple syrup
2 eggs, lightly beaten
1/2 vanilla essence
1 large apple, peeled and grated
75 g (3oz) carrots, peeled and grated
75 g (3oz) raisins
Preheat the oven to 180 degrees centigrade.
Combine the flour, sugar, skimmed milk, powder, baking powder, ginger, cinnamon and salt in a mixing bowl
. In a separate bowl combine the oil, honey, maple syrup, eggs and vanilla essence.
Beat lightly with a wire whisk until blended.
Add the grated apple, carrots and raisins to the liquid mixture and stir well
.Fold in the dry ingredients until just combined
.Don't over mix or the muffins will become heavy.
Line a muffin tray with paper cups and fill the muffin cups until two thirds full
. Bake for 20-25 minutes
