Chicken caesar
Some of Annabel's favourite recipes, produced so that you can cook along with her step by step. Simply pause the video whilst you complete that stage and enjoy some fantastic dishes for all the family.
Recipe :
1 tbsp olive oil
1 slice thick white bread, crusts trimmed and cut into small cubes.
1 chicken breast
1 baby gem lettuce or 1/2 Cos or Romaine lettuce, cut into pieces
1 tbsp grated parmesan cheese
Dressing
2 tbsp mayonnaise
1tbsp grated Parmesan cheese
1 tsp lemon juice
1/2 small clove garlic, crushed
1/8 tsp Dijon mustard
a few drops of Worcester sauce
a few drops Tabasco sauce
Heat the olive oil in a small non stick frying pan and add the cubes of bread.
Fry, turning occasionally until golden brown.
Remove with a slotted spoon and drain on kitchen paper
Cut the chicken into bite sized pieces and add to the pan.
Fry for 3-4 minutes until cooked through and leave to cool.
To make the dressing combine the mayonnaise, parmesan, lemon juice, garlic, mustard, Worcester sauce and Tabasco.
Give the dressing a good stir
. Mix the lettuce and the chicken and toss with most of the dressing.
Scatter over the grated Parmesan cheese and the croutons to finish.
